Shredded Chicken
Ingredient:
1/2kg chicken
1/4tsp turmeric
2 tbsp. oil
2 sliced onions
2 chopped chilli
curry leaves
1 tsp garlic ginger paste
2 chopped tomatoes
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp masala powder
2 tsp coriander powder
2 tsp pepper powder
chopped coriander leaves
Method:
1. In a pressure cooker, dump in the chicken, salt, turmeric and enough water to cover the chicken.
2. Let it whistle about 2- 3 times.
3. Remove the chicken and keep aside the chicken stock.
4. Once the chicken is less hot, shred it.
5. In a wok, pour oil and sauté the sliced onion, chopped green chilli and curry leaves well.
6. Add garlic ginger paste, chopped tomatoes, turmeric powder, chilli powder, masala powder and salt- cook in high flame for few minutes.
7. Then , with low flame, add the shredded chicken, coriander powder, pepper powder. Stir it well.
8. Add in chicken stock and let it cook for few minutes.
9. Sprinkle coriander leaves before serving.

Kerala Chicken Varuval
Marination:
- chicken - 500 grams
- garlic & ginger paste- 2tsp
- salt- to taste
- lemon- 1 tsp
- masala powder -1 tbs
- red chilli powder - 2 tbs
- turmeric powder - 1 tsp
- Mix all well and marinate for 30 min in fridge.
- onion-1 big (sliced)
- tomato - 1
- green chilli -2/3
- garlic - 2 tsp (chopped)
- curry leave- 2 spring
- ginger -2 tsp (chopped)
2. Add finely chopped green chilli.
3. Add handful of curry leaves.
4. Add in sliced onions, sauté till translucent.
5. Add in chopped tomato. Cook till mushy.
6. Now add marinated chicken.
7. Cover and cook for 7 mins and cook uncovered for anther 7-8 min.
8. Sprinkle coriander leaves and serve with rice or bread.

Chicken Pizza
Pizza Dough
Ingredient:
- 350g bread flour
- 2 1/4 instant yeast
- 1tsp sugar
- 1/2 tsp salt
- 225g warm water
- 1 tbsp. olive oil
- Combine dry ingredient, then add water and oil. Knead till smooth & elastic.
- Let it rest for 2 hour.
- Place it on smooth surface and divide into 3 portion.
- Stretch each piece into round and place onto a greased pan.
- Preheat the oven to 160 Dec C. Meanwhile , do the topping and let it rest for 10 min.
- Once done, bake it for 20 min till golden.
- Spread olive oil all around the surface, followed by tomato paste.
- Sprinkle cheddar and mozzarella cheese, onion, pineapple, capsicum and fried chicken.

KOREA FRIED CHICKEN (KFC)
Method:
1. Poke the chicken with a fork.
2. Let it soak in a bowl of milk for 2 hours.
3. Drain it and keep aside the milk.
4. Coat chicken with salt, black pepper, chilli powder, garlic ginger powder.
5. Steam it for 30 minutes.
6. Meanwhile, in the milk add 1 egg, wheat flour, corn starch.
7. Have a separate bowl of breadcrumb.
8. After 30 minutes, dip chicken into the milk mixture, followed by bread crumb.
9. Deep fry it in 3/4 covered with hot oil.
